Frittatas (Mini Omellettes)

Frittata,as they're known in Italy and  is an egg-based dish similar to an  omelettes or quiche, either simple or enriched with additional ingredients such as meats, cheeses, vegetables or pasta. It may be flavored with herbs.Make a great lunch or supper for the family.The kids can take cold leftovers to school in their lunchbox.Its a great and easy recipe which you can make it with your children.They definitely love it.





Ingredients:

1tsp Butter,softened
75g cooked ham, thickly sliced
75g cheddar cheese
30g bell pepper
6 chives,cut into small pieces (i used spring onion)
1/4 can cooked sweetcorn
6 large free-range eggs 4tbsp milk
salt to taste
pinch of pepper





Methods:



  • Preheat the oven to 180c/160c fan/gas 4.Lightly grease six holes of a muffin tray with butter.If you're using a silicone muffin tray,put it on a baking tray so it's easier to handle.
  • Cut the ham  and pepper into small pieces.Grate the cheese on to a plate.Divide the ham,pepper,cheese,chives and sweetcorn between the holes in the muffin tray.
  • Break the eggs into a bowl,add milk and beat until evenly mixed.Season with salt and pepper.Transfer to a jug and ten carefully pour into the muffin holes. 
  • Cook in the oven for 15-20 minute or until just set.Leave to cool for 10 minutes, then turn out.Great to serve with salad



    1. Note:You can replace the ham with cooked chicken,sausage or flaked tuna-or leave it out altogether for veggie frittatas. Cooked peas and mushrooms can be used instead of sweetcorn.
